Pineapple Mango Salsa

• 1 cup chopped mango.
• 1 cup chopped pineapple.
• ¼ cup chopped red onion.
• 2 Tbsp. lime juice.
• ½ cup finely chopped cilantro.
• ½ cup chopped red pepper.
• 1/3 cup olive oil.


1. In a medium bowl combine mango, pineapple, onion, lime juice, cilantro, red pepper, and oil. Mix well.

Notes: Double the recipe for extra salsa to put over other fish dishes like the Salmon Cakes or grilled tilapia, salmon, or even pork. Perfect for fish tacos too!
