Overnight Pumpkin Pie Oatmeal


• ½ cup steel cut oats
• 2 cups unsweetened almond milk
• ½ cup pumpkin puree
• ½ tsp cinnamon
• ¼ cup all spice
• Pinch of ground cloves
• 2 tbsp. brown sugar, divided
• 1 ounce walnuts, chopped and divided


1. Coat the crock pot with non-stick cooking spray. In the slow cooker, combine the oats, milk, pumpkin, cinnamon, allspice, and cloves. Cover and cook on low for 6-8 hours. Stir the oatmeal to get a consistent texture. Top each serving with sugar and walnuts as desired.
