Oatmeal Energy Bites {Gluten Free & Vegan Friendly}

Oatmeal Bites

Makes: 33-35 rolled balls


• 2 cups of oats (for gluten free, use Bob’s Red Mill oats)
• 1/3 cup maple glazed pecans
• ½ cup maple syrup
• 1/3 cup mini dark chocolate chips (the enjoy life brand is vegan friendly)
• ½ cup dried cranberries
• ½ cup naturally no stir peanut butter (may need to adjust amount as you mix together –depending on what brand you use)
• 1 tsp cinnamon
• 1 tsp vanilla extract


1. Use a blender to grind the maple glazed pecans and transfer to a mixing bowl.
2. Add oats, chocolate chips, dried cranberries, cinnamon and mix.
3. Add peanut butter and stir.
4. Add half of the vanilla and maple syrup and mix well. Add remainder of liquids as needed until batter is thickens.
5. Chill batter in fridge for 20-25 minutes.
6. Roll into 1 inch balls and place on a cookie tray with parchment paper underneath.
7. Place trays in freezer for 20-30 minutes and transfer into a Ziploc bag and label
