Healthy Oat Cookies


If you are always on the go with little time to eat a full meal, grab a few of these healthy cookies and toss in your bag. They make a great anytime snack and provide fiber, protein and nutrients your body needs to keep going.

Ingredients

• 2 cups gluten-free rolled oats.
• 2 cups gluten-free oat flour.
• ¾ cup raisins.
• ½ cup hemp seeds.
• ¼ cup chia seeds.
• 2 tsp. baking powder.
• 2 tsp. cinnamon.
• 2 tsp. orange zest.
• ½ tsp. sea salt.
• ¼ tsp. nutmeg.
• 1 cup applesauce.
• ½ cup pure maple syrup.
• ½ cup semi-sweet chocolate chips.

Directions

1 – Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
2 – Grab a large bowl and combine all dry ingredients. Stir until combined.
3 – Zest 1 medium orange and add to mixture. Stir in semi-sweet chips, raisins, applesauce and maple syrup.
4 – Use a spoon or small cookie scoop to transfer mixture (about 1 to 1/14 Tbsp.) onto baking sheet. Gently press down to make cookie shape. Bake until golden brown, about 14-15 minutes.
5 – Remove from heat and transfer to cooling rack. Once cookies have completely cooled. Package in servings (2 cookies) or double the batch and freeze half.

Notes:I like to mix things up based off what I have on hand in my pantry. You can swap maple syrup with raw honey or chocolate chips for carob chips. I will even switch up the fruit by swapping raisons for finely chopped dried apricots or dates. It just really depends on the level of sweetness you want and what you have on hand.
