• 2 tablespoons lemon juice
• 1 tablespoon Dijon mustard
• 1 teaspoon finely minced shallot
• 1 garlic clove, diced
• 1/8 teaspoon kosher salt
• Black pepper to taste
• ¼ cup extra virgin olive oil


• 2-3 cups thinly sliced kale (stems removed and discarded)
• 1 pound brussel sprouts, finely shredded
• 4 slices turkey bacon, cooked and chopped
• ¼ cup roasted almonds, chopped
• ½ cup pecorino cheese, finely grated


1. Mix the salad dressing ingredients in a food processor. Place 2 tablespoons of dressing in each Mason jar.
2. Distribute the cheese evenly between the jars, followed by the chopped bacon and then the roasted almonds.
3. Add the thinly sliced brussel sprouts and kale.
4. Seal tightly with a lid. Enjoy within 4 days for best flavor and freshness.
